    PENNE WITH TUNA

      PENNE WITH TUNA

       

      Ingredients:

      • 1 cup olive oil
      • 1 large can tuna
      • 1 tomato sauce
      • 1 cup green olives (pitted)
      • 2 onions, finely chopped
      • 3 cloves garlic
      • ½ cup capers
      • 6 sun-dried tomatoes
      • ½ cup parsley
      • ½ cup wine
      • salt, pepper
      • 500 g penne or farfalle

       

       

      1. Cook the pasta, drain and set on one side.
      2. Chop the ingredients with a knife (do not use a mixer or a grater).
      3. Drain the tuna and break it into pieces with a fork.
      4. Heat the oil in a deep frying pan and cook the onions and garlic. Add the olives and the other ingredients, ending with the tomato sauce and the wine. Cook for 10-15 minutes. If the sauce begins to dry out, add a little water. When it is ready, add the pasta and stir together.
      5. It can be served without cheese or with a little kefalotiri (or other hard salty cheese).
