SPINACH WITH EGGS
Chop the spinach into small pieces and roughly chop the onion. Heat the olive oil in a saucepan and cook the spinach and the onion for 2-3 minutes. Add half a cup of water. Beat and season the eggs. Wait until the liquid has evaporated from the saucepan and add the eggs, stirring all the time. The food is ready.
Serve with feta cheese and a white wine such as Moschofilero or Malagousia
