STUFFED TOMATOES
4 medium tomatoes
4 eggs
250 g kefalograviera (or other hard salty cheese)
salt, pepper
Slice off the top of each tomato, scoop out the insides and break an egg into each one.
Add the cheese and salt and pepper. Heat plenty of oil in a frying pan and cook the tomatoes until the cheese melts and the egg sets.
Alternatively, put the tomatoes in a baking dish with a little oil and bake in a moderate oven (180°C) for 20-30 minutes.
This delicious starter looks great and is perfect for a new wife wanting to impress her mother-in-law.
