PORK COOKED IN A CLAY POT
Cut the meat into pieces, roughly chop the onions and peppers and mix together all the ingredients except the cheese in a bowl. Leave in the refrigerator for 3-4 hours.
If you have an ovenproof clay pot, transfer the ingredients to it from the bowl and bake in a moderate oven (180°C) for 2 hours. Alternatively, use a baking dish covered with foil. Add the cheese half an hour before the end and remove the foil.
Serve with roast potatoes garnished with mustard.
